Ultrasonic Cheese cutting systems utilize a servo driven ultrasonic knife to cut exact portions of cheese per the customers cutting recipe. Ultrasonic cutting machines are high repeatable, flexible, and more sanitary than traditional wire harp cutting machines.

Large blocks of cheese can be cut to small blocks, wedges, deli logs, etc. with this cutting system for retail packaging applications. Each unique product and cut size are stored in the motion controllers as a unique customer recipe and available to use at the push of a button. Scale feedback can be incorporated to fine tune the cutting recipe to achieve exact weight cutting.
